I haven't got a callback yet (wasn't expecting one anyway) so I'm assuming that I'm in the ensemble for Guys and Dolls. What does the ensemble do in this show?

female ensemble..not much.. in the misson band possibly or in the opening number, runyonland.

You might, additionally, be put into the Havana scene. Some productions, depending on cast size, etc have female ensemble as Hot Box dancers but, obviously, that falls down to your dance ability. You might be included (as some productions do) in the Mission scene for Sit Down, You're Rocking The Boat.
